How Eddy's came to be.

Eddy's on Third is Ed Hintz's first restaurant. It is not his first turn in the industry, and it is not the first Eddy's in the family.

The name is a nod to his grandfather's place, Main Street Ed's. The sign went up on Third Street in 2023.

His family built this one, from the exterior siding to the interior plumbing. Before Hayward, Ed spent 15 years in embassy construction and military support overseas. He traveled for the recipes too.
